    Yummy Chopped Caprese Salad (With Balsamic Dressing)

    Fresh and simple, this chopped Caprese salad is easy to prepare and will be a crowd-pleaser. Some fresh mozzarella cheese, some cherry tomatoes, a few basil leaves from the garden mixed with some kale salad and you have a delicious summer salad recipe.

    Although, I do love a good burger and all the bread, I have to find a balance and also eat some low carb recipes. When it is that delicious, it does not feel like a compromise. This easy Caprese salad is just about chopping all the ingredients and pouring a balsamic dressing to compliment the dish and voilà!

    Here comes an amazing, easy and delicious gluten free recipe to satisfy to your taste buds.

    How To Make Caprese Salad?

    Don't you love a straightforward recipe? Simple and fresh ingredients to make the best Caprese salad with kale.

    Grab your chopping board and your knife, that's all you'll need. In fact, this is all you need most of the time to cook.

    Whether you are getting your produce from the farmer's market, the store, or your garden, make sure to wash them thoroughly. Gather all the ingredients you'll need: Fresh basil, mozzarella, kale, and tomatoes.

    Mozzarella: I took the bigger balls of mozzarella but if you prefer the bocconcini ones, it works too. Even better, the mozzarella di bufala is the real deal.

    Tomatoes: I chose the cherry tomatoes but any other chopped would work as well

    Basil: Fresh herbs will bring way more flavour to your recipe. It will enhance your salad to make it the best Caprese.

    Kale: I have young kale in my garden so the stem is thin. If you have bigger leaves, consider removing the stem and massaging a little your leaves.

    Which Dressing Goes Well With A Chopped Caprese Salad?

    The dressing for a Caprese salad is really simple. Some extra virgin olive oil, balsamic vinegar and some salt.

    You can either pour the whole dressing in the salad and toss or drizzle your serving on your plate.

    Alternatively, you can just use some olive oil and a drizzle of balsamic reduction. It adds a little sweetness to your dish.

    How Long Does Caprese Salad Last?

    You can prepare this salad a day ahead and store it in the fridge. However, if you have the choice, I would recommend making it on the day of for the ultimate freshness of your chopped Caprese salad.

    Since all the ingredients are chopped, it would best to serve it on the same day.

    Lastly, the dressing should always be added just before serving.

    What Should You Serve With A Caprese Salad?

    This delicious and summery goes very well with anything on the barbecue such as my healthy turkey burger.

    You can also serve it for a brunch along with my breakfast quesadillas, croque-monsieur or ham and cheese quiche.

    If you are keeping it vegetarian, serve it on the side of my mushroom and spinach quiche or kale frittata.

    If you are making it to bring to a potluck, consider making this cheesy pull-apart bread. You will not regret it, it is so easy and everyone will devour it in no time.

    Make no mistake, this is still a great recipe in the fall on a side of butternut squash, spinach, and goat cheese roll-ups or with a shepherd's pie.

    Ingredients

    • 1 pint cherry tomatoes
    • 1 cup kale, chopped
    • 4 balls mozzarella
    • 10 basil leaves

    Dressing

    • 5 tablespoon olive oil extra virgin
    • 2 tablespoon balsamic vinager
    • 1 pinch salt

    Instructions

    • Using a sharp knife and a chopping board, cut your cherry tomatoes in half or 4.
    • Chop the kale.
    • Dice the mozzarella balls.
    • Chop the basil leaves.
    • Add all the chopped ingredients in a large bowl.
    • Prepare the balsamic dressing: in a small ramekin, pour all the ingredients and stir.
    • Pour the dressing on the salad, toss and enjoy!
