Ingredients
Roasted Sweet Potatoes

oil, vegetable or of choice
Salt
Caramelized pecans

brown sugar

water

Duck

duck breast
Mixed greens

washed and dried
Honey Mustard Dressing

tsp
honey

tsp
Dijon Mustard

lemon juice

olive oil
Salt to taste
Instructions
Roasted Sweet Potatoes
Pre-heat the oven at 450F.
Wash and peel the potatoes.
Cut the potatoes into cubes.
Spread them on a baking sheet, sprinkle with salt and pour the oil. Bake for 30 minutes.
Caramelized pecans
Prepare your ingredients.
In a pan, pour the sugar and water and bring it to a simmer.
Add the pecan and cook for 2-3 minutes or until the pecans are well coated.
Spread the pecans on a parchemin or baking mat to allow to cool down.
Grilled Duck Breast
Pre-heat the pan to medium-high.
On medium, place your duck breast and cook it for 8 minutes WITHOUT turning it.
Slice and plate it. It's ready!
Honey Mustard Dressing
Mix well all your ingredients together. Done!
Plating
Place your green in a plate, then the duck breast on the side. Sprinkle with the pecans and sweet potatoes. Drizzle with the dressing.
