Easy Florentine Quiche

This vegetarian Florentine quiche is a classic made with an easy pie crust filled with mushrooms, spinach, cheese and eggs. It's a simple and delicious French meal!

Ingredients for the dough: - Butter - Flour - Salt - Water

Preparation:  1. Mix the butter, the flour and salt together until it is crumbly.

Preparation:  2. Add water gradually as you might need a few drops less. Form into a ball and set in the fridge for 20 minutes or so.

Ingredients for the filling:  – Olive oil – Mushrooms – Spinach – Eggs  – Milk – Heavy cream

Preparation: 1. Clean the mushrooms and slice them up. 2. Wash the spinach.

Preparation: 3. Sauté mushroom & spinach for about 4-5 minutes on medium heat. 4. In a bowl, whisk eggs, milk & heavy cream.

Preparation: 5. Roll the crust.  6. Pour mixture over crust with the spinach and mushrooms. Sprinkle over the cheese.

Preparation: 7. Bake for 30 minutes or until the crust is golden and the top also.
