    Dinner With Leftovers: Picadillo Pies

    Cute Picadillo pies for dinner anyone? Leftovers, frozen pie shells and you have a dinner! No waste and an easier evening for Mama. Boom! Tired human, let's use up the leftovers! Also kids when dinner is in a form of a mini Picadillo Pies. So cute!

    Leftovers for dinner are all Mamas' dream

    Right eh?  Some days, I am all creative and inspired in the kitchen, and some others... I am just a busy mom with a full-time job, 2 kids, a husband, and a house to keep up in order.  Some days I am just tired and I don't want to bother too much... Please don't let me hang there, tell me you can relate.  Yes, you do. LIFE IS BUSY so use your Picadillo leftovers!

    Winter has been tough this year, which means that the kiddos exchange all sorts of germs at the daycare.  And one mini-superman gets sick, little-princess takes over... that is on average 6 awful nights and long evenings.  You see where I am getting at?  An easy dinner is well deserved. Eventually, some vacations too and fine by me if it is thanks to some Picadillo leftovers.

    The leftovers I am talking about today are picadillo, the flavored ground beef, and Cuban style.

    The recipe is very simple: some leftovers + Store-bought frozen tart shells (no pride but well... You know YOU are not alone and I AM not alone!) + some greens peas + some cheese!

    Also, the green peas can be substituted for any other veggie you have on hand, this is just to give you good conscience. And I'm hiding greens for el Cubano, not the kids. Believe it or not!

    Picadillo Pies

    This is more an inspiration than a recipe...
    Using the leftovers from the Cuban picadillo, make this cute and delicious pies.

    Ingredients

    • 2 cups Leftover Picadillo
    • 8 Pie shells 2 per person
    • ¼ cup frozen green peas optional
    • ½ cup Grated cheese of choice

    Instructions

    • Put a few green peas in each tart shells. 
    • Fill out the shells with the Picadillo.
    • Sprinkle some grated cheese.
    • Bake in the oven 15 min at 375F.
    • Serve with some steamed veggies, a salad or a soup. Enjoy!
